- Korean Zucchini & Yellow Onion (μ νΈλ°, μν)1/2 cup each
- Anchovy Kelp Broth (λ©ΈμΉλ€μλ§ μ‘μ)3 cups
- Cheongyang Hot Pepper & Scallions1 each sliced
- Doenjang: Japanese Red Miso (use 3 tbsp) with 1 tsp soy sauce.
- Clams: Thinly sliced beef brisket (Chadolbaegi) or mushrooms.
Step-by-Step Cooking Instructions
- 1Bring anchovy kelp broth to a boil in an earthenware pot (Ttukbaegi).
- 2Dissolve fermented soybean paste into the broth using a fine mesh strainer.
- 3Add zucchini, onions, and minced garlic; boil for 5 minutes.
- 4Add fresh clams and cubed tofu; simmer for 5-7 minutes until clams open wide.
- 5Top with hot peppers and scallions, simmering for 1 final minute before serving piping hot.
